Noor Murad is a Bahraini-born chef whose international work experience eventually brought her to the Ottolenghi family where she became Head of Ottolenghi Test Kitchen for 5 years until 2023. She developed recipes for the books Falastin and Ottolenghi FLAVOUR, as well as for Ottolenghi’s Masterclass series and other online Ottolenghi publications. Her Bahraini roots have a strong influence on her cooking, with Arabic, Persian and Indian flavours making a prominent appearance in her recipes.

Welcome drink

Bite on arrival:
Kebab nekhy, a bahraini bhaji, with quick mango pickle.

Bread and butter:
Labneh with slow cooked leeks and peas with woodfired flatbreads.

Main:
Braised short ribs with butter beans and spinach
Lime slaw with curry leaves and turmeric cashews.
Doh piazeh potatoes (Cornish mid potatoes topped with a spiced onion sauce, kefir and herbs)
Carrots with harissa onions and herbs.

Vegetarian main – stuffed romano peppers with mujadara (lentils and bulgur with cinnamon and allspice)
with marinated feta.

Arab mess: cardamom cream, macerated berries, pistachio and rose meringue, sumac, persian candy
floss

Please note – you must have a festival admission ticket to book a banquet at Rock Oyster.

Refunds & Exchanges
• Banquets are non-refundable and non-exchangeable.
• Places will only be held for 15 minutes, after which will be automatically cancelled without refund, and resold.

• All our menus are designed as nut-free, but please be aware all our food is prepared in kitchens where nuts, gluten, and other allergens may be present.
• Banquets can only facilitate dietary requirements as detailed on each banquets page.
• Vegan alternatives can be made available, subject to registering via the dietaries form.
• If you need to register any dietary requirements for your booked feasting experiences for yourself, or others in your group, please do so by emailing info@rockoysterfestival.co.uk
• If you are booking for a group, please consider other people’s dietary requirements, we are in a field so don’t have readily available alternatives.
• Babies and little ones can sit on parents’ laps . If they’re in a pushchair please ask on arrival to be seated at the end of a table. Please note, we don’t have a dedicated children’s menu, so if you’re planning to have them eat with you they’ll need to be booked as an additional seat.
