Tony Duce has been lucky enough to be in the hospitality industry for 30 years, with 20 of those spent in Cornwall. He’s a Lecturer at the Truro and Penwith College for students and apprentices, fuelling a passion for hospitality in the next generation of chefs.
Tony is also a curriculum developer for Hospitality Table Cornwall, creating and piloting new provision through the project which is for, and led by, Cornish businesses.
As a chef, Tony has been inspired by many of his peers and colleagues over the years. He is hugely passionate about local Cornish suppliers, understanding where produce comes from, seasonality, sustainability and the use of classic and modern cooking techniques.
