Joseph Fallowfield

Joseph Fallowfield is the head chef at Housel Bay Hotel on the Lizard peninsula in Cornwall. He currently leads the hotel’s two restaurants: The Terrace and the eponymous two rosette-awarded Fallowfields, with his seasonally-inspired Cornish cooking.

With 19 years of experience in kitchens under his belt, Joseph has learned and developed his craft under names including Stuart Eddy with tenure at The Square in Porthleven, as well as with stints under Jude Kereama at Kota, and Simon Hulstone at Michelin-starred restaurant The Elephant in Torquay. He also spent two years refining his skills in the French Alps.

Joseph approaches his ingredients and cooking with an open mind, constantly evolving his approach to create unique and flavourful dishes. Most recently, his attention has been toward Fallowfields’ tasting menus which seek to deliver the best seasonal and sustainable flavours from around Cornwall.
